½ to 1 bunch kale
1/3 red pepper
Several black olives
1 – 2 T. pine nuts
Chop kale and set aside. Chop red pepper and set aside. Chop black olives and set aside.
Cube or slice avocado and put in bowl. Juice lemon and add to bowl with avocado. Mash the avocado and lemon juice until creamy(ish).
It can have some chunks in it. Add the kale to the mixture and mix until well coated. Top with red pepper, black olives, and pine nuts. Enjoy!
